Este estudo pretende analisar a forma como o ajustamento da oferta à procura pode ser feito numa indústria tão imprevisível como é a da Pastelaria com o objetivo de reduzir o número de sobras sem agravar as ocorrências de stockout. No primeiro momento é realizado um estudo aprofundado da realidade bibliográfica que fundamenta todo o trabalho prático. Numa segunda fase, através da recolha de dados feita a priori, procede-se à elaboração do modelo de previsão e, para complementá-lo, é feito o estudo da realização do transporte que vai permitir o reajustamento da oferta. Posteriormente vai ocorrer a aplicação do modelo obtido como teste à sua eficiência prática na previsão da procura tendo-se obtido um
resultado positivo de 393,00, evidenciando as conclusões e recomendações para o futuro.
This research project aims to analyze how the adjustment of supply to demand can be done in an industry as unpredictable as the pastry with the goal of reducing the number of surplus without increasing occurrences of stockout. At first, an in-depth study of the bibliographical reality that is fundamental for the practical work is conducted. In a second phase, through data collection a priori a statistical forecast model is constructed and, to complement it is studied the performance of transport which will allow the adjustment of the offer. Later will come the application of the model obtained as a test of its practical efficiency in forecasting demand yielding a positive result of 393.00 highlighting the findings and recommendations for the future.
