Esta dissertação procura impulsionar e contribuir para o debate sobre a relação entre televisão culinária e processos de representação de identidades culturais e estilos de vida em Portugal. Uma compreensão desta articulação permite iluminar as forças globais e transnacionais que participam no processo de reconstituição das identidades que surgem associadas ao ser-se português e ao imaginário de Portugal. A reflexão desenvolve-se em duas partes. No que diz respeito à primeira parte, esta caracterizar-se-á por uma discussão teórica do vetor identidade, gastronomia e televisão culinária. Neste espaço as noções de gastronacionalismo e globalização cultural entrarão em diálogo na compreensão da sua relação complexa a qual é indissociável da televisão culinária, da noção de família e dos desenvolvimentos técnicos e sociais da gastronomia. Também será sintetizado o contexto específico da televisão culinária portuguesa, nomeadamente no que concerne a figuras marcantes do século XX que permitem a visibilidade das personas culinárias do 24Kitchen no aparato mediático português contemporâneo. Já na segunda parte da dissertação, é construída uma análise das personas culinárias mais mediáticas do canal 24Kitchen Portugal com programas em língua portuguesa. São estas Henrique Sá Pessoa, Cátia Goarmon, Filipa Gomes e Joana Barrios. A abordagem metodológica utilizada foi o circuito da cultura de Du Gay et al. (1997) o qual, no contexto do trabalho, explora os processos de produção, consumo, representação, regulação e as respetivas identidades associadas às marcas das personas culinárias do canal. Para efetivar o circuito foi aplicada uma análise de conteúdo temática de natureza indutiva às sinopses dos programas. Foram também analisadas as imagens televisivas dos chefs e as suas parcerias publicitárias fora do canal. Tudo isto com o intuito de compreender de que forma as redes semânticas associadas a todos estes chefs constroem uma representação multifacetada de diferentes formas de viver em Portugal e recortes identitários legitimados no contexto de ser-se português na contemporaneidade.
This dissertation aims to boost and contribute to the debate about the relationship between food television and the processes of representation of cultural identities and lifestyles in Portugal. An understanding of this articulation allows the illumination of global and transnational forces that participate in the process of reconstitution of the identities that emerge associated with being Portuguese and the Portugal Imaginary. The reflection develops in two parts. Regarding the first part, it will be characterized by a theoretical discussion of the identity, gastronomy, and culinary television vector. In this space, the concepts of gastronationalism and cultural globalization will be brought into dialogue to understand their complex relationship, which is inseparable from culinary television, the notion of family, and the technical and social developments of gastronomy. It will also synthesize the specific context of Portuguese culinary television, especially concerning iconic figures from the 20th century who paved the way for the visibility of 24Kitchen’s culinary personas within the contemporary Portuguese media landscape. In the second part of the dissertation, an analysis is constructed of the most prominent culinary personas of the 24Kitchen Portugal channel with programs in the Portuguese language. These include Henrique Sá Pessoa, Cátia Goarmon, Filipa Gomes, and Joana Barrios. The methodological approach used was the "circuit of culture" by Du Gay et al. (1997), which, in the context of this work, explores the processes of production, consumption, representation, regulation, and the respective identities associated with the branding of the channel’s culinary personas. To apply the circuit, an inductive thematic content analysis was conducted on the program’s synopses. The chef’s televised images and their off-channel advertising partnerships were also analysed. All with the aim of understanding how the semantic networks associated with these chefs construct a multifaceted representation of different ways of living in Portugal and identity segments legitimized within the context of being Portuguese today.
