O trabalho desenvolvido tem como principal objetivo analisar a evolução do sector da Indústria Alimentar, tendo especial atenção aos efeitos da recente crise. A composição do sector é considerada crucial para o estabelecimento de comparações, nomeadamente quanto aos seus subsectores e a sua posição no total da economia. A metodologia utilizada pode ser agregada em três níveis: numa primeira fase pretende-se estudar alguns indicadores das bases de dados do BP e do INE (dimensão, emprego, produtividade, entre outros); numa segunda fase será apresentado um estudo à estabilidade do Balanço e DR através de testes de hipóteses a uma amostra de empresas da base de dados Amadeus; por último serão apresentados dois modelos econométricos com o intuído de explicar a Rentabilidade do Ativo e a Produtividade. As conclusões indicam que a Indústria Alimentar é composta maioritariamente por PME´s, sendo o CAE 107 (produtos de padaria) o que apresenta um maior peso, com cerca de 70% do número de empresas do sector. Nos anos de 2008 e 2009 as empresas do sector, consideradas na amostra, foram mais afetadas pela crise. A Indústria Alimentar regista uma quebra superior ao total da economia nos indicadores de Produtividade e VAB, no ano de 2009.
The main purpose of this work is to analyze the development of the Food Industry, with special attention to the effects of the recent crisis. The composition of the sector is considered crucial to the establishment of the comparisons, in particular as regards its subsectors and its position in the total economy. The methodology can be aggregated into three levels: the first phase is to study some indicators of databases of BP and of INE (dimension, employment, productivity, among others); in a second phase will be presented a study on the stability of Balance sheet and Income Statement through hypothesis testing a sample of companies in the database Amadeus; finally, two econometric models will be estimated, in order to explain the return on assets and labour productivity. The conclusions indicate that the Food Industry is composed mainly by SME´s, being the CAE 107 (bakery products) the most representative, with approximately 70% of the number of companies in the sector. In the years of 2008 and 2009 the companies of the sector, considered in the sample, were most affected by the crisis. The Food Industry registers a break higher than the total economy in productivity indicators and GVA in the year 2009.
