Abstract(s)
Assim como no resto do mundo, o consumo de leite em Portugal tem vindo a diminuir. Para garantir a sustentabilidade do setor, é necessário compreender as razões subjacentes a esta tendência. Desta forma, este estudo teve como objetivo conhecer detalhadamente o consumidor português, as suas preferências de consumo de leite e produtos lácteos e as suas perceções acerca da produção leiteira. Numa sociedade cada vez mais consciente do que consome, vários estudos têm observado níveis crescentes de preocupações éticas e ambientais relacionadas com a produção leiteira. No entanto, tais preocupações e opiniões negativas coexistem com níveis elevados de desconhecimento em relação ao leite, ao seu papel na saúde humana e à sua produção. Entre setembro de 2023 e fevereiro de 2024, foram realizados inquéritos presenciais em diferentes estabelecimentos comerciais de venda a retalho, tendo sido entrevistados 134 portugueses, nos quais se incluíam tanto consumidores como não consumidores de leite e produtos lácteos. Em concordância com as preocupações e perceções globais, os participantes do estudo expressaram preocupação relativamente ao bem-estar animal e à sustentabilidade ambiental e social das vacarias leiteiras. Embora se tenham observado perceções positivas sobre alguns dos temas analisados (como as condições adequadas de bem-estar ou a utilização correta dos antimicrobianos nas vacarias leiteiras de Portugal), foi possível identificar algum nível de desconhecimento sobre as práticas da produção leiteira e, de forma evidente, um certo distanciamento entre o consumidor e o setor. A nível de preferências, os portugueses entrevistados revelaram preferir consumir produtos lácteos em vez de leite. No que diz respeito aos atributos do leite, o preço foi o fator mais importante para os consumidores do estudo, no momento de compra. Ao conhecer as perceções dos consumidores, o setor pode adaptar-se melhor às suas expectativas, implementando estratégias que incentivem o consumo de leite e invertam a tendência atual
ABSTRACT - Consumer surveys: perceptions of the Portuguese dairy production systems – Preliminary findings - As in the rest of the world, milk consumption in Portugal has been decreasing. To ensure the sustainability of the sector, it is necessary to understand the reasons behind this trend. Therefore, this study aimed to understand the Portuguese consumers in detail, their preferences of milk and dairy products and their perceptions about dairy production. In a society with a growing awareness about their consumption habits, several studies have observed increasing levels of ethical and environmental concerns related to milk production. However, such concerns and negative perceptions coexist with high levels of lack of knowledge regarding milk, its role in human health as well as dairy production. Between September 2023 and February 2024, 134 Portuguese consumers, including both consumers and non-consumers of dairy products, were interviewed in face-to-face surveys. Aligned with global concerns and perceptions, participants were concerned with animal welfare and the environmental and social sustainability of dairy farms. Even though there were positive perceptions concerning some of the analyzed topics (such as the appropriate welfare conditions or the correct use of antimicrobials in dairy farms in Portugal), it was possible to identify some level of lack of knowledge about dairy production practices and a gap between the dairy sector and the consumer. Regarding the preferences of the participants, they preferred dairy products to milk. In terms of milk attributes, price was the most important factor for consumers at the time of purchase. By knowing consumers’ perceptions, the dairy sector can adapt strategies which align to consumers’ expectations, in an attempt to encourage milk consumption and to reverse the current declining trend
