O presente trabalho consiste no projeto de uma exploração intensiva de ovinos com aptidão
para a produção de carne, com o intuito de exportar os animais vivos, bem como, produzir e
comercializar carne maturada de animais de refugo para o canal HORECA, valorizando a
mesma e inovar o mercado.
Para aferir o conhecimento sobre o consumo da população portuguesa em relação à carne
de ovino e sua maturação foi efetuado um inquérito ao consumidor final. À questão “frequência
do consumo da carne de borrego”, 38,9% respondeu ocasionalmente, 37,4% em épocas
festivas, 4,2% muitas vezes e 19,5% nunca. Da amostra inquirida, 96,3% nunca consumiu
carne maturada, no entanto, desta, 56,1% mostraram interesse em experimentar. Verificouse
com este questionário que existe uma oportunidade no mercado para este tipo de produto.
O projeto foi desenvolvido numa exploração com 2,2 hectares, em Tomar, e ao longo da sua
realização foi analisado o planeamento da produção e foram descritos detalhadamente as
componentes da mesma: mão de obra, instalações e equipamentos. Para a produção,
descreveu-se o maneio dos animais ao nível alimentar e sanitário.
Por fim, realizou-se um plano de marketing seguido de um estudo de viabilidade económica
considerando uma vida útil de 10 anos para o projeto, utilizando um plano de crescimento do
efetivo ao longo destes anos. Indicadores de rentabilidade como o Valor Líquido Atualizado
(VLA) (4654757,26€), Taxa Interna de Rentabilidade (TIR) (34,73%), Rácio Benefício-Custo
(RBC) (1,19) e Período de Retorno (PR) (3 anos) comprovaram a rentabilidade do projeto
devido ao VLA positivo, TIR superior à Taxa de Atualização (5%), RBC superior a 1 e PR
inferior à vida útil do projeto. A análise de sensibilidade da rentabilidade considerou variações
nas receitas, no investimento e nos encargos na ordem dos 5 e 10%, confirmando a
viabilidade e interesse em expandir para novos segmentos de mercado.
A project of an intensive sheep farm for meat production, aiming to export live animals and to produce ageing meat from culled animals to be sold through the HORECA channel, was developed. A survey was conducted in order to obtain information about Portuguese consumption habits related to lamb meat and aged sheep meat. A sample of 196 interviewees was collected and results reveled that 38.9% occasionally consumed lamb meat, 37.4% during festive seasons, 4.2% often and 19.5%, never consumed this type of meat. In what concerns aged meat, 96.3% never consumed, but 56.1% of these showed interest in trying it. Results revealed a promising opportunity for this type of product in the market. It was projected a farm with 2.2 hectares, located in the Tomar municipality. Its implementation, production, plan, labor work, facilities and equipment’s were designed and determined. Animal management was described in terms of nutritional and sanitary managements. Additionally, a marketing plan was conducted followed by an economic study considering a period of 10 years for the project. Indicators such as Net Present Value (NPV) (4654757,26€), Internal Rate of Return (IRR) (34,73%), Benefit-Cost Ratio (BCR) (1,19) and Payback Period (PP) (3 years) revealed the project profitability due to the positive UNV, IRP higher than the Update Rate (5%), BCR higher than 1 and PP lower than the project period. The profitability sensitivity analysis considered variations in revenue, investment and expenses in the order of 5 and 10%, also confirming the viability and interest in reaching new market segments with these types of products.
