Abstract(s)
A indústria dos produtos cárneos transformados (PCT) desempenha um papel fundamental na alimentação do homem. No entanto, as preocupações relacionadas com a segurança dos alimentos e a presença de substâncias químicas nestes produtos têm gerado um crescente interesse no consumidor. Este estudo teve como objetivo avaliar a perceção dos consumidores sobre os riscos químicos associados a estes produtos. Este estudo exploratório foi baseado num questionário aplicado a consumidores de Lisboa e Madrid. Foi utilizada uma amostra não probabilística pelo que os resultados não são extrapoláveis para a população. Através desta análise, procurou-se identificar as principais atitudes, preocupações e conhecimentos em relação ao tema. Foram analisados os fatores que influenciam a decisão de compra, o conhecimento, a perceção de risco, segurança dos alimentos e confiança na legislação aplicável. Os resultados revelaram um baixo nível de conhecimento dos PCT. O sabor e o preço emergiram como os principais critérios de escolha. A análise também revelou uma complexidade na perceção dos consumidores, que expressam uma preocupação com os riscos, mas também um reconhecimento da importância dos aditivos na indústria alimentar. Conclui-se que há uma necessidade urgente de investir em ações de educação alimentar para aumentar o conhecimento dos consumidores. A indústria alimentícia e os órgãos reguladores devem considerar as diferentes perceções de risco e desenvolver estratégias de comunicação mais eficazes
ABSTRACT - Assessment of consumer perception of chemical hazards existing in processed meat products in Lisbon and Madrid - The industry of processed meat products plays a fundamental role in human nutrition. However, the concerns related to food safety and the presence of chemical substances in these products have generated increasing interest among consumers. This study aimed to assess the perception of consumers regarding chemical risks associated with these products. This exploratory study was based on a questionnaire applied to consumers in Lisbon and Madrid. A non-probabilistic sample was used; therefore, the results cannot be generalized to the population. Through this analysis, we sought to identify the main concerns, awareness, and attitudes regarding this topic. We analyzed the factors that influence the purchasing decision, the knowledge, risk perception, food safety and confidence in applicable legislation. The results revealed a low level of knowledge regarding processed meat products. Flavor and price were identified as the key selection criteria. The analysis also revealed a complexity in the perception of consumers, who express both concern about the risks and recognition of the importance of additives in the food industry. In conclusion, we have found that there is an urgent need to invest in educational actions about food in order to increase consumer awareness and promote food safety. The food industry and regulatory bodies have to consider different risk perceptions between regions and develop more effective communication strategies
