The following Professional Internship Report, within the MSc. in Viticulture and Enology (Vinifera Euromaster), concerns a professional internship carried out from June to October 2020 in France on the topic of Botrytized wines, which is a specific type of sweet wines that derive from the infection of grape berries by a fungus called Botrytis cinerea. Château la Varière, the winery in which the internship took place, is located at Brissac-Quincé a village 20 km away from Angers the biggest and most known town in the area. All the produced wines are subjected to the Anjou wine region of Loire Valley. Among them, four different PDO botrytized wines are produced in this winery from four different appellation areas. This report aims to present a critical literature review on this specific category of sweet wines along with a critical analysis based on the observations concerning the activities that were carried out during the internship period. The critical literature review on the topic was recently published in an international peer-reviewed journal, and the link of the open access article is included in this report in the Appendix
