O presente relatório serve, no âmbito da conclusão do Mestrado em Engenharia de Viticultura e Enologia, como suporte escrito de um estágio curricular, realizado em ambiente empresarial na Herdade do Rocim localizada na sub-região da Vidigueira, no Alentejo.
Este estágio, realizado entre 14 de fevereiro e 24 de junho de 2022, teve como foco principal a realização de atividades ligadas ao setor de enologia na adega da Herdade do Rocim. As atividades desenvolvidas compreenderam vários processos desde a conservação e estabilização do vinho até ao engarrafamento, entre eles a colagem dos vinhos, filtração tangencial, estabilização tartárica e adição de produtos enológicos nos acabamentos finais. A higienização dos depósitos, talhas e barricas fez também parte das atividades realizadas.
A realização deste estágio permitiu a consolidação de conhecimentos teóricos, adquiridos durante o curso, complementados com a parte prática. Tive a oportunidade de adquirir experiência de trabalho em adega e de desenvolver competências de trabalho em equipa.
This report was developed in the context of the Master’s degree in Viticulture and Oenology Engineering, serving as a written support of a curricular internship developed in a business environment at Herdade do Rocim located in the sub-region of Vidigueira, in Alentejo. This internship, carried out between February 14th and June 24th, 2022, was mainly focused on the execution of activities related to the oenology sector at Herdade do Rocim winery. The activities included various processes from the stabilization and wine aging to bottling, such as fining, cross-flow filtration, tartaric stabilization and the addition of oenological products. The containers hygiene (stainless steel tanks, amphoras and barrels) was also part of the activities carried out. This internship allowed the consolidation of theoretical knowledge, acquired during the Master’s degree course, complemented with the pratical part. I had the opportunity to gain experience working in a winery and to develop teamwork skills.
