Abstract(s)
Bucelas encontra-se na região vitivinícola de Lisboa, umas das maiores em Portugal, tanto
em área de vinha como em produção de vinho. A cultura da vinha e do vinho está presente
em Bucelas há centenas de anos, apresentando uma longa e distinta história.
O Arinto, cultivar (Vitis vinífera, L), proveniente desta região, caracteriza-se por conceder
níveis elevados de acidez aos vinhos e portanto expandiu-se e é atualmente uma casta
plantada por todo o País, embora seja em Bucelas onde é reconhecido por atingir a sua
máxima expressão, pelo terroir onde se insere. Por isto, em 2010, a Confraria do Arinto
procedeu à inscrição do registo de Bucelas como capital do Arinto, junto do Instituto
Nacional de Propriedade Industrial. Para a produção de vinho branco DOC Bucelas, esta
casta deve estar presente num mínimo de 75%, nos vinhos aqui produzidos. Existindo ainda
a possibilidade de os restantes 25% serem constituídos pelas outras 2 castas, Esgana Cão
e Rabo de Ovelha, permitidas para a elaboração destes vinhos.
O estágio foi realizado na Quinta da Romeira, pertencente ao grupo Sogrape desde 2019.
Tal como a região onde se insere, esta Quinta possui muitos anos de história, sendo
reconhecida pela qualidade dos vinhos brancos que ali são produzidos.
Para efeitos de dissertação de mestrado, foi elaborado o presente relatório, relativo ao
estágio profissional realizado na Quinta da Romeira, período que coincidiu em grande parte
com a campanha de vindima. Para tal, foi possível relatar e descrever os trabalhos e
processos inerentes à produção de vinho branco durante este período, as atividades
laboratoriais realizadas ao longo do estágio, dar a conhecer a envolvência e características
do meio onde assentam as vinhas e como tudo combinado se traduz no produto final, os
vinhos ali produzidos.
Bucelas is located in the wine region of Lisbon, one of the largest in Portugal, both in terms of planted vineyards and wine production. The culture around the wine and the vines has been an important part of Bucelas for centuries, presenting a long and distinguished history. Arinto, grapevine cultivar (Vitis vinifera, L), originally from this region, is characterized by giving the wines high levels of acidity and because of that characteristic, this variety is currently planted throughout all country. Although, it is in Bucelas where it is recognized for reaching its maximum expression, the major reason is the terroir where it is inserted. For this reason, in 2010, the ‘Confraria do Arinto’ registered Bucelas as capital of Arinto. For the production of white wines DOC Bucelas, this variety must make at least 75% of the wines produced in here. There is still the possibility of completing the remaining 25% with the other two varieties allowed for the elaboration of these wines, Esgana Cão and Rabo de Ovelha. The internship took place at Quinta da Romeira, which has been part of the Sogrape group since 2019. Like the region where it is located, this Quinta has many years of history and is recognized for the quality of the white wines that are produced there. For the purposes of the master's dissertation, this report was prepared, concerning the professional internship carried out at Quinta da Romeira, a period that largely coincided with the vintage campaign. To this end, it was possible to report and describe the work and processes inherent to the production of white wine during this period, the laboratory work performed during the internship, to acknowledge the surroundings and characteristics of the environment where the vineyards are based and how everything combined translates into the final product, the wines produced there.
