Este estudo incidiu na pesquisa de nemátodes pertencentes à família
Anisakidae, em pescada (Merluccius merluccius), carapau (Trachurus trachurus) e
sardinha (Sardina pilchardus), oriundos das lotas de Peniche e de Setúbal.
Na dissecção dos 1116 peixes foram recolhidos 3703 nemátodes parasitas que
foram identificados como larvas no terceiro estadio (L3), pertencentes ao género
Anisakis (99,94%) e ao género Hysterothylacium (0,05%).
Foi investigada a associação do parasitismo por Anisakis spp. em cada
espécie de peixe e entre as espécies de ambas as lotas, relacionada com a origem,
estação do ano, comprimento, peso e sexo. As amostras da lota de Peniche
evidenciaram maior proporção de peixes infectados do que as de Setúbal. As
diferenças de proporções entre espécies foram significativas, sendo o carapau a
espécie onde se observou a maior proporção de peixes parasitados (79,63%), seguida
da pescada (51,34%) e por último da sardinha (3,76%). Observou-se associação entre
o número de anisaquídeos presentes e as características morfométricas do peixe e a
estação do ano.
Conclui-se que existe risco de anisaquiose associado ao consumo destas
espécies de peixe, em cru ou pouco cozinhadas, no entanto, o cumprimento da
legislação vigente e campanhas de informação das populações podem contribuir para
o reduzir.
ABSTRACT - This study focused on the research of nematodes belonging to Anisakidae family, in european hake (Merluccius merluccius), horse mackerel (Trachurus trachurus) and sardine (Sardina pilchardus), obtained from the fish markets of Peniche and Setúbal. From the 1116 fish dissection, 3703 nematodes parasites were collected and identified as a third stage larvae (L3), belonging to the Anisakis genus (99,94%) and to the Hysterothylacium genus (0,05%). Associations between parasitism by Anisakis spp. within each fish species and between the fish species from both fish markets, related to origin, season, length, weight and gender, were investigated. Samples from Peniche fish market revealed higher proportions of infected fish than those from Setúbal. A significant difference between species was found, with horse mackerel being the fish with the highest proportion of infected specimen (79,63%), followed by hake (51,34%) and sardine (3,76%). Association between morphometrical characteristics, season of the year and the presence of anisakids was observed. It is concluded that there is risk of anisaquiosis associated with the consumption of these fish species, when eaten raw or undercooked, however, the enforcement of existing legislation and public educational campaigns can contribute to its reduction.
