The wines examined are 22 in total, made up of at least 85% of Nebbiolo, produced in the province of Turin and in the lower Aosta Valley, between 2018 and 2015. The focus of this thesis is on the winemaking methods adopted, the phenolic composition and its effects on the color of the wines. In this phase of the work, the samples were compared with other research carried out in more well-­known areas such as Langhe and Roero and with Nebbiolo of Carema, Barbaresco, Donnas. By fractionation of the color of wines at pH 0, we obtain the percentages of anthocyanins monomers, the pigments linked to the tannins and stable and pigments that are decolourable with the addition of sulfur dioxide. The values of the colour intensities of the samples are below the average of the values recorded compared to the results of the other studies. As for the colour tone, which is higher, the more a wine will tend to orange tones, at least half have results with high values and therefore tending towards orange. The last analysis carried out is the measurement of polymeric pigments of wines that uses a protein precipitation, precisely bovine albumin serum (BSA), combined with bleaching with bisulfite. Polymer pigments are made up of anthocyanins linked to tannins, these can be differentiated into two groups: those that do not precipitate with proteins, short polymeric pigments (SPP) and those that precipitate with proteins, given their size, long polymeric pigments (LPP). This work contributes to the qualitative and quantitative knowledge of the wines of the territories examined.
