O estágio relatado serviu de conclusão ao Mestrado de Engenharia de Viticultura e Enologia.
Teve como objetivo a familiarização com o setor vitivinícola de forma prática, mais
concretamente com o nicho dos vinhos licorosos de Carcavelos. Foi importante a absorção
dos conhecimentos práticos seculares transmitidos pela Adega do Casal da Manteiga e a
aplicação de conhecimentos teóricos adquiridos no Instituto Superior de Agronomia.
Ao longo do relatório é feita uma descrição do projeto e do meio vitivinícola da região. São
descritas, detalhadamente, as atividades da adega, desde a preparação da vindima ao final
da vinificação. Foram também identificadas fragilidades ou oportunidades de melhoria nos
processos, e sugeridas as suas possíveis soluções.
Alguns destes problemas passaram por dificuldades orçamentais, contrabalançadas por uma
grande capacidade da adega de fazer muito com pouco; alguns estrangulamentos que
atrasaram processos na vindima; a definição do calendário de vindima; alguma falta de
regulação no gasto de água e a falta de integração digital em alguns processos específicos.
Felizmente, a adega tem todos estes problemas identificados e é uma preocupação solucionálos
a curto prazo.
A adega está bem preparada e equipada para receber confortavelmente a uva e o vinho que
tem de processar anualmente. Esta tem bastante potencial de crescimento, uma localização
e história privilegiada. O projeto tem mais força na sua vertente enológica e tem grande
interesse no avanço científico. Há um plano definido para aumentar o reconhecimento da
marca na região.
A campanha de vindima do ano 2023 foi positiva na grande maioria dos seus aspetos. Sofreu
de alguns imprevistos técnicos, o que não impediu que fosse um ano bastante produtivo a
nível da vinha e do vinho, acompanhando a trajetória ascendente deste projeto.
Foi uma experiência positiva e um ótimo complemento ao conhecimento teórico transmitido
ao longo do Mestrado.
The reported internship served as a conclusion to the Masters in Viticulture and Enology Engineering. Its purpose was to facilitate familiarization with the sector in a practical way, specifically in the market niche of fortified wine from Carcavelos. It was important to internalize the empirical secular knowledge shared by Adega do Casal da Manteiga and to apply the theoretical knowledge acquired at the Instituto Superior de Agronomia. Throughout the report was done a bibliographic revision of the project and the region’s relevant environment. A detailed description was given of the winery’s activities from harvesting to the end of vinification. There were identified some defects and problems inherent to these processes, and possible solutions were suggested. Some of these problems were budget difficulties; some bottlenecks that delayed processes in the winery; the definition of the harvest date; some inefficient water usage; and the lack of digital integration in some specific processes. However, these issues were counterbalanced by the winery’s great capacity of maximizing resources. These challenges have also been identified and the winery aims to solve them in the short term. The winery is properly equipped to comfortably receive the grapes and wine that are processed annually. It has significant growth potential and a privileged location and history. The project is stronger on its enology front, with a great interest in scientific advancement. There is also a plan to increase brand awareness in the region. The 2023 harvest campaign was largely successful, despite suffering from some technical problems. However, these did not prevent it from being a very productive year for the vineyard and the wine, tailing the upwards trajectory of the project. It was a positive experience and a great complement to the theoretical knowledge taught during the Masters.
