O Sistema de Gestão e Segurança Alimentar desempenha grande importância nas indústrias alimentares. Através de certificações, Sistema HACCP e Codex Alimentarius, a aplicação e manutenção realizam-se de forma eficaz, garantindo os requisitos legais, de acordo com o Regulamento 852/2004, assim como a inocuidade alimentar. As indústrias devem fomentar ações de formação na temática das Boas Práticas de Higiene e Segurança Alimentar, bem como processos de melhoria contínua, que assumem forte relevância para os consumidores.
A Bimbo trata-se de uma das maiores indústrias de panificação, regendo-se pelo seu Controlo rigoroso de Qualidade e Segurança Alimentar e desenvolvendo permanentemente uma Cultura de Segurança Alimentar.
Desta forma, surgiu a oportunidade de estagiar nesta empresa (entre fevereiro e julho de 2023) e pelo gosto pela área, realizou-se o presente trabalho durante 6 meses, no Departamento de Qualidade e Segurança Alimentar.
Assim, começou-se pela observação, em chão de fábrica, do funcionamento das linhas e métodos de produção e procedimentos de higiene associados. O estudo prosseguiu-se com a atualização do documento interno das regras e princípios gerais de higiene e fabrico, com base nas Guidelines Bimbo e código CXC-1-1969 do Codex Alimentarius. Deu-se ainda início à implementação do ciclo PDCA, que visa melhorar significativamente a dinâmica e o cumprimento das boas práticas de higiene após cozedura. Realizou-se uma análise e avaliação de risco. Durante o estágio não se obtiveram resultados resultantes das melhorias propostas, visto que as mesmas ainda não estão totalmente implementadas. Desenvolveu-se 3 questionários, para avaliar a Cultura de Segurança Alimentar relativa ao cumprimento de boas práticas de higiene e fabrico, onde se obteve resultados positivos. Os resultados da avaliação, ainda assim, indicaram a necessidade de ações de formação nessa área.
Elaborou-se uma reflexão crítica do Departamento de Qualidade e através da respetiva Análise SWOT identificaram-se oportunidades de melhoria.
The Food Safety and Management System plays a major role in the food industry. Through certifications, the HACCP System, and the Codex Alimentarius , implementations and maintenance are carried out effectively, guaranteeing legal requirements, in accordance with Regulation 852/2004, as well as Food Safety. Industries should encourage training in Good Hygiene and Food Safety Practices, as well as continuous improvement processes, which are of great importance to consumers. Bimbo is one of the largest bakery industries, governed by its strict Food Safety and Quality Control, while constantly developing a Food Safety Culture. During the period between February and July 2023, there was the privilege of undertaking an internship at this company. Driven by the passion for the field, six months were dedicated to working in the Quality and Food Safety Department. The first step was to observe the operation of the production lines and methods, and the associated hygiene procedures on the shop floor. The study went on by updating the internal document on the rules and general principles of h ygiene and m anufacturing, based on the Bimbo Guidelines and Codex Alimentarius code CXC 1 1969. The implementation of the PDCA cycle was also started, which aims to significantly improve the dynamics and compliance with good hygiene practices after cooking. A risk analysis and assessment was carried out. During the internship, no results were obtained from the proposed improvements, as they have not yet been fully implemented. Three questionnaires were developed to assess the Food Safety Culture in relation to compliance with good hygiene and manufacturing practices. The results were positive, even though they indicated a need for training in this area. A critical reflection of the Quality Department was drawn up and opportunities for improvement were identified through the SWOT analysis.
