Este estudo consistiu na síntese de triacilgliceróis (TAGs) de baixo valor calórico tipo
MLM (compostos por ácidos gordos de cadeia média nas posições sn-1,3 do TAG e
um ácido gordo de cadeia longa na posição sn-2) por acidólise de óleo de grainha de
uva com ácido cáprico (C10:0), e interesterificação deste óleo com o éster etílico do
ácido cáprico (C10EE). Utilizou-se como biocatalisador a lipase sn-1,3 regiosseletiva
de Thermomyces lanuginosus imobilizada (Lipozyme TL IM, Novonesis), em meio livre
de solvente constituído pelos reagentes numa razão molar TAG/C10:0 (TAG/C10EE)
igual a 2. A lipase sn-1,3 regiosseletiva catalisou a substituição dos ácidos gordos
originais das posições 1 e 3 nas moléculas de TAG do óleo de grainha de uva pelo
ácido cáprico preservando a posição 2 sem se verificar perda de atividade do
biocatalisador. Durante a interesterificação, observou-se um rendimento médio de
novos TAGs (MLM) de 79,2% ± 4,1 enquanto por acidólise o valor foi de 61,5% ± 5,91.
Os resultados demonstram que a interesterificação com C10EE apresentou maior
eficiência na produção de novos TAGs. A elevada estabilidade operacional do
biocatalisador é muito importante numa potencial aplicação em escala industrial, com
o intuito de promover o aproveitamento sustentável de subprodutos da indústria
vitivinícola para obtenção de produtos de valor acrescentado (MLM), contribuindo para
a economia do setor.
The aim of this study was the synthesis of low-calorie triacylglycerols (TAGs), of the type MLM (containing medium-chain fatty acids at positions sn-1,3 and a long-chain fatty acid at position sn-2), by acidolysis of grapeseed oil with capric acid (C10:0) or interesterification with capric acid ethyl ester (C10EE). The immobilized sn-1,3 regioselective Thermomyces lanuginosus lipase (Lipozyme TL IM, Novonesis) was used as catalyst, in solvent free media consisting of the reagents at a molar ratio TAG/C10:0 (TAG/C10EE) equal to 2. This sn-1,3 regioselective lipase catalyzed the replacement of the original fatty acids at positions sn-1,3 of grapeseed oil TAGs by capric acid, while the original fatty acids at position sn-2 were maintained. Reactions were carried out in a continuous packed-bed plug-flow bioreactor, at 40°C, for 145 h, without noticeable activity loss of the biocatalyst. During interesterification, an average yield in new TAGs (MLM) 79.2 % ± 4,1 was observed, while the average conversion value by acidolysis was 61.5 % ± 5,91. These results show higher efficiency of interesterification compared to acidolysis reaction for new TAGs production. The high operational stability of the biocatalyst is very important for industrial scale process implementation, aiming at promoting the sustainable valorization of byproducts of viticulture and enology to obtain value-added products (MLM).
